- 200g Dark Unsweetened Baking Chocolate
- The juice of 2 Clementines
- 4 Egg Yolks
- 3 tablespoons Honey
- 500ml Mascarpone Cheese
In a double boiler melt the chocolate with the orange juice. Once the chocolate has melted but not gotten too hot, add the egg yolks stirring constantly until thoroughly mixed then add the honey. Cook until the whole thing begins to thicken.
Remove the top of the double boiler and place over the water a large bowl with the mascarpone cheese. Heat the cheese until you can easily run a whisk through it. Whisk the softened cheese quickly, making it a bit frothy.
Pour in the chocolate mixture and continue whisking until everything is well blended. Pour into 6 mousse cups or small glass tumblers and chill for two hours.
If you like, serve with a dollop of whipped cream.
