- 1/2 head of Leaf Lettuce (or the equivalent in Mixed Greens)
- 2 small Plum Tomatoes, seeded and diced
- 1 tablespoon Olive Oil
- 2 tablespoons Honey
- 1/3 cup Walnut Pieces
- 1/4 cup Red Wine
- 1 Pear, peeled and sliced
- 1/4 cup Roquefort Cheese, crumbled
Wash the lettuce and add the diced tomato.
Heat the oil and honey in a frying pan. Add the walnuts and coat. Add the wine, bring to a boil and cook until the sauce thickens a tiny bit. Add the pear slices, coat them and heat through.
Pour the sauce over the lettuce and tomato then add the cheese. Toss it all together and serve immediately.
(Serves 1 for dinner or 2 as a side dish)
